Jambalaya 2

1 lb of sausage or 1 lb of ground beef (not too lean)
1 onion
Two 15 oz cans diced tomatoes
One 15 oz can of tomato sauce
Season salt
3 or 4 cups of cooked rice

If you use sausage cut into small pieces, cut it into half lengthwise, and then cut the halves into half. Then cut into 1/4-inch long pieces. Brown meat using little drops of water so it won't burn. After the meat is either cooked or well browned, add the onion and stir. On a medium fire, drop in 2 cans of diced tomatoes and stir in and add 2 cans of water and let cook for 15 or 20 minutes Then add the tomato sauce, the season salt and let cook on a low to medium fire until cooked well (about 20 minutes). Recheck seasoning and add more salt or seasoning to make it more spicy. Mix in cooked rice and serve.
