Rice Amandine with Mushrooms

1/2 cup sliced almonds
2 tbs butter or margarine
1 can (4 oz) sliced mushrooms, drained
3 cups cooked rice
Salt and ground black pepper to taste

In a large skillet saute almonds in butter until golden. Stir in remaining ingredients Heat thoroughly.

Makes 6 servings.

Serve with broiled steak, roast beef, broiled chicken.

Microwave Method:
Combine sauteed almonds with remaining ingredients in a 1-1/2 quart microwave proof dish. Cook, uncovered, on HIGH (maximum power) 5 to 6 minutes, stirring after 3 minutes.
