Rice Au Gratin Supreme

4 cups cooked rice
1/2 cup, each finely chopped, onion and green pepper
1/4 cup chopped pimentos
One 10-3/4 oz can cream of mushroom soup
1/3 cup mayonnaise
2 cups grated cheddar cheese
1/2 cup milk
1 tsp salt
1/4 tsp pepper

Combine rice, onion, green pepper and pimentos. Blend soup, mayonnaise, 1 cup cheese, milk and seasonings. Stir into rice mixture. Turn into a buttered 2 qt casserole. Sprinkle with remaining cheese. Bake at 350F for 25 minutes or until hot and bubbly.

Makes 6 servings.
