Rice Cheddar 2

3/4 cup sliced green onions, including tops
2 tbs butter or margarine
3 cups cooked rice
1/4 cup diced pimientos
1 cup diced Cheddar cheese

Saute onions in butter until golden brown. Add rice and pimientos. Cook over low heat until rice is thoroughly heated, stirring occasionally. Stir in cheese. Serve at once.

Microwave Instructions:
Place butter in a 1-1/2 quart microwave proof baking dish. Cook. on HIGH (maximum power) 1 minute. Stir in onions. Cook on HIGH 2 minutes. Add rice and pimientos. Cover and cook on HIGH 5 minutes, stirring after 2 minutes. Stir in cheese.

Makes 6 servings.
