Savory Sauced Rice

One 7 oz box Konriko Wild Pecan Rice
2 Tbs butter or margarine
1 cup chopped onions
One 2 oz jar diced pimentos
1/2 tsp salt
Dash pepper
1/2 cup sour cream
1/4 cup mayonnaise
1-1/2 tsp lemon juice
1/2 tsp curry powder
1/4 cup crumbled crisp bacon, optional

Cook Wild Pecan Rice according to package directions. Saute onions in butter in large skillet until tender. Stir in cooked rice and heat thoroughly. Add pimentos, salt, and pepper; toss lightly. Combine remaining ingredients. Spoon over beds of rice. Top with bacon.

Yield: 6 servings.
