Shrimp Fried Rice

2 tbs peanut oil
1/2 lb small shrimp, peeled
1/2 tsp sugar
1/2 tsp salt
1/2 cup green onion, chopped
1/2 cup diced bamboo shoots
2 cups cold cooked rice
1 cup fresh bean sprouts
3 tbs soy sauce
3 eggs lightly beaten
1 tbs sesame seed oil

Heat oil in a large wok until it is hot. Add next three ingredients, and stir fry for 3 minutes. Add green onions and bamboo shoots and stir fry for 1 minute. Add rice and bean sprouts, stir fry for 30 seconds. Add soy sauce, stir. Make deep well in center of rice and pour in eggs. Allow the eggs to set a bit, then scramble with spatula and stir into rice along with sesame seed oil. Serve immediately.

Makes 4 servings.
