Spicy Rice

1/2 cup each chopped onions and celery
1 tbs butter or margarine
1 tsp salt
1/8 tsp each ground allspice and cinnamon
1/8 tsp ground black pepper
1 tbs brown sugar
3 cups cooked rice
1/2 cup raisins, plumped
1 tart cooking apple, cored and chopped
1/2 cup sliced almonds, toasted

In a large skillet cook onions and celery in butter until tender crisp. Add seasonings, rice and raisins. Heat thoroughly. Stir in apple; remove from heat. Cover and let stand five minutes. Sprinkle with almonds.

Makes 6 servings.

Serve with poultry, ham, pork roast or chops.

Microwave Method:
Melt butter in a shallow, 2-quart microwave proof dish on HIGH (maximum power) 1 to 1-1/2 minutes. Add onions and celery. Cover; cook on HIGH 1 to 2 minutes, or until tender crisp. Stir in seasonings, rice, and raisins. Cover and cook on HIGH 3 to A minutes. Add apple. Cover and cook on HIGH 1 minute. Stir in almonds.
