Spinach Rice

3 med eggs
4 oz sharp Cheddar cheese, grated medium fine
1 cup hot cooked rice (cook in chicken broth)
Salt to taste
10 oz pkg frozen chopped spinach, cooked and drained
1/4 cup skim milk
Pepper to taste

Lightly beat one of the eggs. Stir in the rice, half of the Cheese and the salt, mixing well. Press over bottom of a buttered nine inch pie plate. Lightly beat remaining two eggs, stir in spinach, skim milk, remaining cheese, salt and pepper. Spoon over the rice mixture. Bake uncovered in a preheated 350F oven until set, about 20 minutes.
