Beef Tenderloin and Broccoli Rice

1-3/4 cup water
3 tbsp. butter or margarine
1 pkg. (4.4 oz.) Uncle Ben's Country Inn Brand rice dishes Broccoli Rice Au Gratin
3 tbsp. mayonnaise
2 tbsp. dairy sour cream
2 tsp. prepared horseradish
1 tbsp. small capers, rinsed and drained
4 beef tenderloin filets, cut 1 inch thick
1/2 tsp. freshly ground black pepper
1/2 tsp. salt
1/2 cup chopped tomato

Combine water, 2 tbsp. of the butter and contents of rice and seasoning packets in saucepan. Bring to a boil. Cover tightly and simmer 20 minutes. While rice simmers, combine mayonnaise, sour cream, horseradish and capers; set aside. Sprinkle filets with salt and pepper. Heat remaining 1 tbsp. butter in 10 inch skillet over medium high heat. Cook filets in skillet about 4 minutes per side for medium rare. After rice has simmered 20 minutes, remove from heat. Let stand covered 5 minutes, or until desired consistency. Stir in carrot. Serve filets with capered mayonnaise alongside rice.
