Chicken Potato Salad

2 chicken breasts, cut into chunks
3 potatoes
3 eggs
1/2 onion
1/2 bell pepper
1/2 stalk celery

Boil chicken, onions, bell pepper, and celery until chicken is cooked and tender. Boil potatoes and egg. Mix egg yolk with mayonnaise and season to taste. Mix potatoes, chicken and egg whites. Add onions, bell peppers and celery from chicken broth, but do not add broth. Combine mayonnaise mixture with potatoes.

Serves 6.
