Exotic Chicken Salad 1

1 quart chicken, bite sized pieces
1 small can water chestnuts, halved, drained
1 pound green seedless grapes, halved
1/3 cup celery, diced
1/3 cup toasted almonds
Crisp lettuce
Salad dressing:
1-1/2 cups mayonnaise
1 tablespoon curry powder or ginger
1 tablespoon soy sauce
1 tablespoon lemon juice

Measure the quart of bite sized chicken white meat is best. Combine chicken pieces with water chestnuts, grapes and half of toasted almonds. Mix salad dressing and add to chicken. Chill for several hours. Serve on lettuce leaf and garnish with remaining almonds.
