Savory Baked Rice and Sausage

2 cups rice, cooked
2 cups sliced sausage, cooked
1 cup onion, chopped
1 cup celery, chopped
1 cup Cheddar cheese, grated
2 eggs
1/3 cup mayonnaise
1 teaspoon Dijon-style mustard
1/2 teaspoon cayenne pepper
One 8-ounce can tomato sauce
1/2 cup green onion, chopped
3/4 cup beef broth
Hot sauce to taste

In a 2-1/2 quart casserole or baking dish co combine rice, sausage, onion, celery and cheese. In a small bowl whisk eggs. Blend in mayonnaise, mustard and pepper. Pour over rice mixture and mix well. Bake in a 350 degree F oven about 30 minutes. In a small saucepan combine tomato sauce, green onion, broth and hot sauce. Place on heat, bring to boll, then reduce heat and simmer 10 minutes. Serve rice with sauce spooned over top.
