Emu Texas Straw Hat

1 cup onion, chopped
2/3 cup celery
2/3 cup bell pepper, chopped
3 tablespoons olive oil
2 pounds emu meat
2-1/2 teaspoons chil1 powder
2 teaspoons salt
1/2 cup catsup
Two 6-ounce cans tomato paste
2 cups water
2 teaspoons Worcestershire sauce
2 cups shredded Cheddar cheese
Tabasco to taste
Corn chips

In large skillet, cook onion, celery and green bell pepper in olive oil until tender, not brown. Add ground emu (browned and lightly drained). Add remaining ingredients except the corn chips and cheese. Simmer uncovered 1-1/2 hours, stirring occasionally. Serve meat sauce on top of corn chips. Top with cheese.
