Vegetable and Meat Moussaka

1-1/2 pounds eggplant or zucchini or potatoes
2 medium onions, chopped
1/4 cup olive oil
1 pound lean ground meat
2 garlic cloves, minced
One 8-ounce can tomato sauce
Salt and pepper to taste
2 eggs
1 cup milk
1/3 cup Fata cheese
1 teaspoon ground cinnamon

Preheat oven to 350F. Saute vegetables in small amount of oil until golden brown. Drain. Arrange half on bottom layer of 7 x 11 inch baking dish. Saute onions until soft. Set aside. In remaining oil, cook meat until redness is gone. Add onions, garlic, tomato sauce, cinnamon, salt and pepper. Pour over zucchini or potatoes and arrange remaining vegetables over meat. Beat eggs and add milk. Sprinkle with cheese.
