Mediterranean Stuffed Chicken

1-1/2 pounds, fresh Italian sausage, casings removed
1 tablespoon garlic, chopped
Cracked black pepper
2 bags fresh spinach, washed and destemmed
1/2 cup Fetta cheese with peppercorn, crumbled
1/2 cup Feta cheese with basil and tomato, crumbled
1/2 cup bread crumbs
4 whole boneless, skinless chicken breasts

Preheat oven to 375F. Brown sausage and garlic in deep, large pot; drain excess grease. Add spinach, pepper and cook until spinach is done. Add cheeses and bread crumbs. Let mixture cool. Season all sides of washed chicken breasts and stuff each with a fourth of spinach mixture. Bake 1 hour or until meat is done, uncovered. Moisten occasionally with beer or dry, white wine.

Serves 4-8.
