Chicken Spectacular 2

- 3 cups diced, cooked chicken
- One 12 ounce package long grain rice
- One 10-3/4 ounce can cream of celery soup
- One 6 to 8 ounce jar or can sliced mushrooms
- One 8 ounce can water chestnuts, sliced and drained
- 1 medium onion, finely chopped
- 1 cup mayonnaise
- Salt and pepper to taste
- Grated Cheddar cheese for topping
Preheat oven to 350F. Dice chicken fairly coarsely. In a large bowl, lightly combine all ingredients except the cheese. Place in one large or two medium casserole dishes. Top with cheese and bake at 350F until lightly browned, approximately 30 minutes.
