Pork Roast 1

One 8-pound pork leg
3 tablespoons vinegar
2 teaspoons ground sage
2 teaspoons red pepper
3 teaspoons salt
3 tablespoons olive oil
3 tablespoons flour

Preheat oven to 350F. Rub meat with vinegar and seasoning.

Wrap in a linen cloth that has been dipped in vinegar, repeating this when dry. Let stand 12 hours.

When ready to cook, rub with olive oil and flour. Roast 30 minutes to the pound. Gravy can be made, also potatoes can be added to roast during last hour and 15 minutes of cooking time.
