Chicken Quesadillas 2

1 pound boneless, skinless chicken breast, cut into small pieces
1 jar sliced mushrooms, drained
8 large flour tortillas
1 small can chopped green chiles
1-1/2 to 2 cups grated cheese
2 tablespoons lemon or lime juice
2 to 3 tablespoons fajita marinade (Fabulosa Quick)
2 to 3 tablespoons margarine

In a large skillet add mushrooms, 1 tablespoon lemon juice and 1 tablespoon of marinade. Cook 7 to 10 minutes. Add chicken, remaining juice and marinade.

Cook until chicken is done in another skillet, heat tablespoon of butter. Add a tortilla topped with chicken mixture, sprinkle green chiles over chicken and then sprinkle cheese.

Top with another tortilla. Fry until golden brown on each side and cheese is melted. Cool for 3 minutes and slice.
