Mexican Shepherd's Pie

2 lb ground meat
Seasonings - Salt, Pepper, chili powder to taste
8 oz Velveeta cheese
1 can Rotel (diced)
1 can whole kernel or cream style corn
About 6 servings mashed potatoes
1/4 lb grated cheddar cheese

Cook ground meat with chopped onion and seasonings. Add Velveeta cheese and cook together. Stir in Rotel, pour into casserole dish, cover with corn. Then spread mashed potatoes over top. Sprinkle grated cheese evenly across top. Bake in 350F degrees oven 15 minutes.
