Red Beans and Sausage

1 lb red beans
1 chopped onion
1 chopped bell pepper
3 cloves chopped garlic
Smoked sausage
Seasoning

Pour beans in bowl, pick out bad beans, then wash with warm water. Pour beans in large pot and cover with hot water. Cook for 1-1/2 hours. Add onions bell pepper, garlic, sausage (cut in 1 inch slices) and seasoning.

When beans are tender, add 1 tbs of oil to make creamy. When cooked, top with fresh parsley and onion tops.

Serve over hot rice.
