Veal Roast

Soak a 5-6 lb roast overnight in milk covered in the refrigerator. Retain the milk for gravy. Preheat an oven to 450F. Remove the meat and allow it to reach room temperature, about 30 minutes. Rub with butter and garlic. Dredge in flour seasoned with marjoram and pepper. Lay several strips of bacon across the top. Reduce the oven heat to 300F and bake, uncovered, about 25 to 30 minutes per pound until done. Remove the meat from the pan. Cover it where it will remain warm.
