Cauliflower Puffs

Finger Food
1 Head Cauliflower
1 Egg
2 tbs Dijon Mustard
2 tbs Dried Sage
1 cup Shredded Swiss Cheese

*** Cook cauliflower in boiling water for 10 or 15 minutes until tender. Cool. Mash cauliflower into a large bowl. Add shredded cheese, egg, sage and mustard. Mix until blended. Use as filling for already made puff shells (see puff dough recipe). After filling shells, place on a cookie sheet and heat in 350F oven for 15 minutes. Serve warm.

Yield: 36 Puffs
