Cauliflower Pies

Finger Food
1 pkg Frozen Puff Pastry
1 Head Cauliflower
2 tbs Dijon Mustard
1 tsp Sage
1 Egg
1/2 cup Swiss Cheese
1 Egg White

*** Cook cauliflower until tender. Mash in blender or food processor. Add shredded cheese, egg, sage and mustard. Mix well. Thaw pastry puff for 20 minutes. Roll out each sheet on lightly floured board. Divide each sheet into 4 squares. Fill each square with cauliflower mixture leaving 1 inch border on each side. Brush border with egg white. Fold square diagonally in half to form triangle. Brush with egg white and prick with fork. Place pies on cookie sheet and bake in 400F oven for 30 minutes or until brown. Serve warm.
