*** In medium saucepan, bring water, salt and butter to a boil. Remove from heat. Stir in flour all at once. Stir until mix leaves side of pan. Cool for one minute. Add one egg at a time, beating well after each egg. Mixture should be smooth and glossy. Place dough into pastry bag and pipe one inch mounds of dough at least one and a half inches apart onto a greased cookie sheet. Bake 15 minutes in 450F oven. Reduce heat to 350F and bake 30 minutes or until shells are golden brown with dry, rigid sides. Fill with various fillings.
