1 cup Bulgur
2 cups Boiling Water
1 Lemon
1/4 cup Olive Oil
2 Chopped Scallions
2 Chopped Tomato
1/4 cup Parsley
2 tbs Mint Leaves
1 Dash Salt
1 Dash White Pepper
Pita Bread

*** Place bulgur (cracked wheat or kasha) in dry pot. Toast lightly for 2 minutes. Add boiling water. Lower flame and simmer for 15 minutes (or until water is absorbed). Cool and mix in juice or one lemon, olive oil, scallions, tomatoes, parsley and mint. Mix thoroughly. Salt and pepper to taste. Let stand in refrigerator at least 3 hours. Cut pita bread into small triangles. Guests can fill pita pockets with cold taboli.
