Carrot and Cabbage Slaw

1 sm. head of cabbage, cut into thin shreds
1-2 cup carrots, cut into thin shreds
1 cup coarsely grated cheese
1 cup un-peeled diced apples
2 tbsp. ea. chopped parsley and chives
1/2 tsp. celery seed
1 cup raisins
1 cup mayonnaise
Salt and pepper, to taste

Mix together the shredded cabbage, carrots and coarsely grated cheese. Dice the apples and dip them in lemon juice so they don't discolor. Add the parsley, chives, celery seed and raisins. When ready to serve combine with the mayonnaise. Spoon into the center of each tomato and serve on a bed of lettuce.

Makes 6 to 8 servings.
