Jellied Ambrosia

1 envelope. un-flavored gelatin
1/4 cup cold water
1/4 cup boiling water
1/4 cup sugar
1-1/4 cup fresh orange juice
1 tbsp. fresh lemon juice
2 lg. oranges
1 lg. banana
3 tbsp. grated or shredded coconut

Soften gelatin in cold water. Dissolve in boiling water. Add sugar and stir until completely dissolved. Add orange and lemon juices. Cool. Peel oranges and cut out sections. Peel and slice banana. When orange mixture is syrupy, fold in fruit and coconut. Pour into a 3 cup mold or 4 individual molds and chill until firm. Serve garnished with orange sections and shredded coconut.

Serves 4

NOTE: If the lemon juice is increased to 2 tablespoons, this makes a delicious fruit salad serving with a sour cream dressing
