French-Spanish Retreat Salad

One 17-ounce can French cut string beans
1 cup Spanish olive
1/2 cup slivered almonds
1/2 large onion
1-3/4 cup cooking sherry
1/2 teaspoon Creole seasoning
1 teaspoon vegetable oil

Preheat oven to 250F. Place almonds in the oven for 5 minutes until crisp. Pour water off the beans. Combine beans, olives, and cooking wine. Bring to a boil over medium heat. Add 1 slice of onion Add seasoning and almonds. Lower the heat, and let simmer. When beans are tender, add 1 teaspoon of vegetable oil. Do not cook all of the wine out.

Serves 8.
