Vegetarian Pasta Salad

One 12-ounce bag rotini
1/2 head lettuce
1 cucumber, medium
2 Small zucchini
2 small summer squash
1 small bag radishes
2/3 cup small cauliflower florets
2/3 cup small broccolli florets
12 cherry tomatoes, cut in half
1/2 cup low fat mayonnaise
8 ounces low fat Dannon Yogurt, sweetened
Salt and white pepper to taste
3 sticks string cheese, sliced

Cook rotini according to bag instructions. Rinse, drain, set aside to cool. Mix in 1 tablespoon low fat plain yogurt. Stir thoroughly and place in refrigerator to cool. Break lettuce into bite sized pieces in large salad bowl. Add iced cucumber, zucchini, squash, radish, cauliflower, broccoli, tomatoes, salt and pepper. Toss salad to mix. Add cooked rotin1 pasta, mayonnaise, and yogurt. Toss together until all coated. Chill and serve.

Serves 12-16.
