Vegetable Salad

1/4 cup red wine vinegar
3 large cloves garlic, minced
1 cup green onion, finely chopped
2 small cucumbers, peeled and finely chopped
1 bell pepper, finely chopped
3 medium tomatoes, diced
1/4 cup parsley, chopped
3 tablespoons salad oil
1/2 teaspoon black pepper

Place vinegar and garlic in a small bowl. Let stand 30 minutes. In a large mixing bowl, combine green onions, cucumbers, bell peppers, tomatoes and parsley. Add salad oil and black pepper to vinegar and garlic in small bowl. Whisk together. Pour over salad. Toss gently. Refrigerate 2 hours before serving. Toss once before serving.
