Chicken Jambalaya Salad

- 1/4 cup reduced-calorie mayonnaise
- 2 tbs water
- 1 tbs chopped fresh parsley
- 1 tsp lemon juice
- 1 tsp sugar
- 1/8 tsp hot pepper sauce
- 1-1/2 cups cooked rice
- 1 cup quartered yellow cherry tomatoes, or 1 med yellow tomato, diced
- 1/4 cup chopped sweet red pepper
- 1/4 cup sliced green onions
- 1/2 cup (3 oz) cooked small shrimp
- 5 oz white chicken, drained
- Shredded lettuce
To make dressing:
In cup, combine mayonnaise, water, parsley, lemon juice, sugar and hot pepper Sauce; set aside.
In medium bowl, combine remaining ingredients except lettuce. Serve chicken mixture on lettuce. Drizzle with dressing.
Makes 4-1/2 cups salad or 3 servings.
