Creamy Mandarin Rice Salad

- 3 cups cooked rice, cooled
- 1 can (16 oz) Mandarin orange segments, drained
- 1-1/2 cups thinly sliced celery
- 1/2 cup diced green pepper
- 3/4 cup sour cream
- 1 tbs lemon juice
- 1 tsp each seasoned salt and seasoned pepper
Blend all ingredients thoroughly. Chill. Serve on salad greens and sprinkle with sliced almonds, if desired.
Makes 6 servings.
Perfect with poultry, pork or ham.
