Curried Coleslaw

1 large head of cabbage, cored and shredded
2 med carrots peeled and grated
2 tbsp. finely grated onion with juice
2 cups mayonnaise
1/4 cup sugar
1/4 cup red wine vinegar
1 tsp mustard powder
1 tsp curry powder
1 tbs celery seed
1/2 tsp salt
1/2 tsp black pepper

Combine cabbage and carrots in a large bowl, set aside. Combine remaining ingredients and mix well to a creamy consistency. Pour mayonnaise mixture over cabbage and carrots, mix well. Cover and chill. Re-mix well prior to serving.

For people not familiar with curry powder, this can be an introduction to a spice mixture which may be a pleasant surprise. Experiment a bit with the seasoning quantities to suit your own taste.
