Harvest Rice Salad

1-3/4 cups water
1 tbs butter or margarine
1 pkg (4.9 oz) Uncle Ben's Country Inn Brand Chicken Stock Rice with Pasta Shells
1 garlic clove
1/2 tsp salt
1 cup cooked great northern or small white beans
1 cup cooked corn
1/2 red or green bell pepper, cut into short, thin strips
4 green onions, thinly sliced
1 tomato, seeded and chopped
1/4 cup bottled Italian dressing
1/4 cup chopped parsley
Black pepper, to taste

Combine water, butter and contents of rice and seasoning packets in medium saucepan. Bring to a boil. Cover tightly and simmer until all water is absorbed, about 25 minutes.

Meanwhile, crush garlic in salt. Combine beans, corn, bell pepper, onions, tomato, dressing, parsley, black pepper and garlic crushed in salt in large bowl. Add cooked rice and mix thoroughly. Chill.

Makes 6 servings.
