Jeweled Grape and Mushroom Salad

2 cups thinly sliced fresh mushrooms
1 cup red California grapes, halved and seeded if necessary
1/4 cup chopped green onions
2 tbs chopped parsley
Vinaigrette Dressing
Bibb lettuce

Combine mushrooms, grapes, onion and parsley with Vinaigrette Dressing. Marinate at least one hour. Serve on lettuce-lined salad plates.

Vinaigrette Dressing:
1/4 cup oil
2 tbs each red wine vinegar and lemon or lime juice
1 tsp salt,
1/4 tsp dry mustard,
1/8 tsp each basil, oregano and sugar
A dash of pepper

Mix well.

Makes 1/2 cup.
