Oriental Chicken Salad 1

2 tbs rice vinegar
1 tbs reduced-sodium soy sauce
4 tsp honey
2 tsp sesame oil
1 cup halved snow peas, blanched
1-1/2 cups diagonally sliced carrots, blanched
1 cup Daikon (Oriental radish) peeled and cut in match stick thin strips
5 oz premium chuck white chicken

In a medium bowl combine vinegar, soy sauce, honey and sesame oil. Add remaining ingredients; toss gently to mix. Cover; refrigerate 2 hours or until serving time. Garnish with lettuce and cucumber if desired.

Makes 4 cups or 2 servings.
