Potato Salad 3

5 large red potatoes, cut up
6 large eggs
1/3 cup mayonnaise
3 tsp mustard
1 tsp white vinegar
1 tbs sour pickle juice
1 tbs vegetable oil
1/4 cup chopped sour pickles
1/3 cup diced red bell peppers
1/3 cup diced green bell peppers
1 tbs Nature's Seasoning
1/2 tsp ask
1/2 tsp black pepper
1/2 tsp red pepper

In a medium saucepan, boil potatoes with a tsp of salt. When potatoes become tender, drain, cool and peel. Put into large bowl, mash and set aside.

Boil the eggs 20 minutes. Cool and peel. Chop egg white, set aside, mash yolks. Add mayonnaise, mustard, vinegar, juice and stir until creamy yellow. Add egg whites, Nature's Seasoning salt, black and red peppers. Stir very well. Add pickles, red and green peppers. Stir again. Pour over the potatoes, stir well until a yellow color.

If desired, add three sprigs of parsley in the center of salad.
