Ruby Spinach Salad

2 Red grapefruit
1/2 lb fresh spinach, torn into bite-sized pieces
1 pint fresh strawberries, sliced in half
Ruby Poppy Seed Dressing

Finely grate 1-1/2 tsp peel from grapefruit; set aside for salad dressing. Peel and section grapefruit over a bowl, reserving juice for salad dressing. Combine grapefruit sections, spinach, and strawberries in a bowl; toss gently. Serve immediately with Ruby Poppy Seed Dressing.

Yield: 6 servings

Ruby Poppy Seed Dressing:
1/4 cup red wine vinegar
1 cup salad or vegetable oil
1/2 cup sugar
1/2 tsp dry mustard
1-1/2 tsp finely grated grapefruit peel
1/4 cup grapefruit Juice
2 tbs poppy seeds

Combine all ingredients in the container of an electric blender; cover and blend well. Refrigerate several hours before serving.

Yield; 1-1/2 cups
