Shamrock Rice Salad

3 cups hot cooked rice
1/4 cup French dressing
1/4 cup finely chopped onion
1 tsp salt
1/4 tsp ground black pepper
2/3 cup mayonnaise
1/2 cup chopped celery
1/3 cup chopped green pepper
1/2 cup pickle relish
2 tbs chopped pimiento
2 hard-cooked eggs, chopped

Combine rice, French dressing, onion, salt, and pepper. Cool. Add mayonnaise, celery, green pepper, relish, pimiento, and eggs to rice mixture, toss lightly.

To make shamrock (optional):
Pack rice salad into lightly-oiled shamrock shaped 6-Cup mold. Un-mold on chilled serving plate.

Makes 6 servings

Serve with:
Corned Beef, Buttered Cabbage, Irish Soda Bread, Creme do Menthe ice cream.
