Summer Shrimp Salad

3 lb shrimp, peeled and deveined
2 med tomatoes, diced
1/3 cup chopped green onion tops
1/2 to 3/4 cup mayonnaise, enough to moisten Lettuce
Avocado slices
Boiled egg slices

Boil shrimp with seasoning until cooked. Let cool. In a bowl, combine shrimp, diced tomatoes, green onion tops and mayonnaise. Mix well. On a plate, arrange lettuce, avocado slices and sliced boiled eggs. Pour shrimp mixture on top. Keep in refrigerator until ready to serve.

Serves about three people.
