Sunshine Pasta Salad

One 12 oz pkg Rainbow or Garden Style Twirls, uncooked
1-1/2 cups mayonnaise
One 6 oz can frozen orange juice concentrate, thawed
1-1/2 tsp ground ginger
1 tsp sugar
One 8 oz can sliced water chestnuts, drained
One 8 oz can bamboo shoots, drained
1/3 cup sliced green onions
1/2 cup cashews
Chinese pea pods, optional

Cook twirls according to package directions; drain. Rinse with cold water to cool quickly; drain well. Meanwhile, in small bowl combine mayonnaise, orange juice and ginger until smooth and creamy. In large bowl combine twirls, water chestnuts, bamboo shoots and green onions. Toss gently with orange-ginger dressing. Chill. Before serving, blend in cashews. Serve on bed of pea pods (ends and strings removed), if desired.

Makes 6 to a serving.
