Apple Blossom Syrup

1-1/2 cups apple Juice
1 cup granulated sugar
1/3 cup firmly packed, shredded fresh ginger root
Peel from one orange
Peel from one lemon

In medium saucepan, combine all ingredients. Bring to a boil, stirring until sugar is dissolved. Simmer, uncovered, 10 minutes. Remove from heat; cool to room temperature. Strain and refrigerate.

Yield- About 1-1/2 cups syrup.
