*** Cook potatoes until done. Set aside. Meanwhile, mix drained tuna with mayonnaise, celery, minced onion and parsley. After potatoes have cooled, cut thin slice from top of each potato. Scoop out potato leaving 1/8 inch thick shell. Add scooped out potato to tuna mixture. Blend well. Spoon tuna and potato mixture into potato shell. Arrange in baking dish. Heat in a 350F oven for 10 to 15 minutes. Serve warm.
