Crawfish Loaf

2 cup crawfish meat
1/2 to 3/4 cup milk
2 cup bread crumbs
1 tbsp. onion, grated
2 tbsp. parsley, finely minced
1 tbsp. lemon juice
1/4 tsp. salt
1/2 tsp. cayenne
2 eggs

Combine all ingredients, blending thoroughly, and pack into a loaf pan. Pour a little milk on top of mixture and bake in a moderate oven, 350F for about 45 minutes or until done.

Serves 6.
