Greek Style Shrimp

2 tbsp. olive oil
1 cup sliced green onions
4 lg. cloves garlic, minced
1 lb. large shrimp, shelled and deveined
3/4 cup V-8 vegetable juice
1/3 cup crumbled feta cheese (2 oz.)
2 tbsp. chopped fresh parsley
Dash pepper
8 slices French bread

In 10 inch skillet over medium heat, in hot oil, cook onion with garlic until onion is tender. Add shrimp, cook until shrimp are pink and opaque, stirring constantly. Stir in V-8 juice. Heat to boiling. Reduce heat to low; simmer 2 minutes. Sprinkle with cheese, parsley and pepper. Serve with bread.

Makes 4 servings.

NOTE:
If desired, in oven safe skillet, after sprinkling with cheese, broil 3 minutes or until cheese is lightly browned.
