Crawfish Bisque 1

1 large diced onion (yellow)
1 diced bell pepper
1 tablespoon oil
One 6-ounce can of tomato paste
One 8 ounce can of tomato sauce
4 cups chicken stock
1 tablespoon Worcestershire sauce
1 teaspoon Kitchen Bouquet
Salt and black pepper to taste
1 pound peeled crawfish tails
1 cup diced green onion

Saute onion (yellow) and bell pepper in oil. Add tomato paste, tomato sauce, chicken stock and seasonings. Cook over medium heat for 45 minutes.

Add crawfish tails and green onions. Cook over medium heat for 15 minutes.

Serve over rice
