Shrimp Strudel

1 pound fresh asparagus
2 pounds shrimp
1 medium onion
1 small bell pepper
2 sticks celery
1/2 cup Swiss cheese
1/2 teaspoon dill
Salt and pepper to taste
3 tablespoons butter
3 tablespoons flour
1 cup of half and half
Sprinkle of parsley
Approximately 4 tablespoons oil

Preheat oven to 350F. Clean and devine shrimp and saute in the oil with the onion, bell pepper and celery about 10 minutes. Steam asparagus until crisp and tender. Line an ll x 9 inch baking dish with the sauteed shrimp and the seasonings. Add layer of asparagus. Sprinkle with cheese and dill. Make a white sauce with the butter, flour and half and half. Drizzle over asparagus and cheese. Salt and pepper to taste. Bake 15-20 minutes, so you can serve it piping hot. Sprinkle parsley over top.

Serves 6-8.
