Salmon Patties Hawaiian

1 egg, beaten
1 small onion, chopped
1 potato, cooked and mashed
1 large red salmon
1 large can sliced pineapple
Salt and pepper to taste
Dry bread crumbs

Saute onion. Add egg, potato, carrot, salmon, salt and pepper. Cook until done. Add enough bread crumbs to hold mixture together. Remove from heat and chill. Shape into patties and place on cookie sheet. Top each patty with a slice of pineapple. Bake for 30 minutes.

Patties may be coated with flour and fried in oil, if preferred. When done, place pineapple on each patty.
