Crawfish Fettuccine 6

1 cup butter or margarine
3 bell peppers, chopped
3 medium onions, chopped
3 stalks celery, chopped
3 cloves garlic, minced
2 pounds crawfish
1 pint half-and-half
1 pound jalapeno cheese, shredded
1 12-ounce package Luxury fettuccine
1/4 cup grated Parmesan cheese

Preheat oven to 350F. In a large skillet or Dutch oven, melt butter. Add peppers, onion, celery and garlic. Stir and cook 10 minutes. Add crawfish, half-and-half and cheese. Stir and cook on low until cheese melts. Prepare fettuccine according to package directions. Drain.

Combine fettuccine and cheese sauce. Pour in a 3-quart casserole. Cover and bake in a 350F for 30 minutes. Before serving, top with Parmesan cheese.
