Crawfish Lasagna 2

One 8-ounce package lasagna noodles
7 ounces pesto sauce
15 ounces ricotta cheese
1 pound crawfish tails
4 to 5 Roma tomatoes, sliced
16 ounces mozzarella cheese, grated
1/2 cup Parmesan choose
Salt, pepper, Tony Chachere's, garlic powder, to taste

Preheat oven to 350F. Boil lasagna noodles (or use no-boil lasagna noodles). Layer the following in two 8 x 11 inch baking pans or 1 large pan: lasagna noodles, pesto, ricotta cheese, crawfish tails, seasonings, lasagna noodles, Roma tomatoes, mozzarella cheese, Parmesan cheese.

Place pan(s) in oven covered for 45 minutes, uncovered for 15 minutes. Remove from oven. Let stand 10 minutes before serving.

Serves 6.
